I have made some crunchy crackers that are low-carb and very easy! I’ve previously failed to get a crunch with other recipe combinations. Preheat the oven to 140 degrees Celsius Soak 4 tbsp Chia seeds in 120ml water for 10mins or more until absorbed. It will be like a gel. Meanwhile shell your pistachios and crush in pestle and mortar (or quick blend). I kept some quite large chunks. I get big bags of pistachios at Asda as they are cheap and nice and high fibre. Then add to your chia gel the following ingredients: 8 tbsp crushed piatachios (measured after crushing) 4 tbsp UF FF (60g) 2 tbsp sesame oil (or olive oil) 2 tbsp sesame seeds (optional) A couple of pinches of sea salt or more. Mix and it will stick together into a ball Roll the ball out between 2 sheets of baking parchment to thickness 4mm (1/6 inch) thick. (I have a rolling pin with different depth options) Remove top layer of baking paper. Use pizza roller to cut into squares. Bake at 140 Celsius 45 mins on one side. Turn over and cook for another 30 mins or more on the other side. Even leave in oven with door open. This is to get them really dried out. This quantity made 24 crackers and I estimate they are each 0.7g net carbs, 2.8g total carbs, 2.1g fibre, 2.3g fat, 1g protein, 32 kcal. Next time I may try more seasoning now I’ve achieved the crunch.
