Sorry to say I use ultra fine flour. I make these every week so really not sure what is going on. They look good in your picture. Did you try a different heat and are you proofing the rolls covered in cling film or a bin bag. Sorry can’t be more help
After another epic fail of bread rolls, and a waste of 250g of flour, I went back and double checked the recipe and noticed it was using FIBREFLOUR and not ULTRA-Fine like I was using...Jesus!🙈
Normal fibreflour ordered and 3rd attempt will be made at the weekend.
Oh no, that’s not good. How did the proving process go? I included inulin with the yeast and proved them for at least 1hr. I then cooked them on one of those pizza trays the ones with holes all over to help them cook more evenly.

I proofed the yeast first and then added all the dry ingredients. Then made buns and left to proof for 2 hrs.
Just read queen keto recipe and she proofed twice. I may try that.
